Baked Granola with Blueberries

When it's cold outside this baked granola dish is

warm and satisfying, nutritious and delicious!

Preheat oven to 350 degrees

Grease or spray an 8” square or round baking dish

 

1/3 cup Sugar

1/3 cup Oil, I used olive oil but coconut oil works nicely as well. 

2 Eggs, slightly beaten

2 1/3 cups Buttermilk, milk or you can use a Nut Milk if you prefer.

2 tsp Baking Powder

1 tsp Salt

3 cups Hammer & Tuffy’s Barn Dance Blueberry Blend Granola

1 cup of fresh Blueberries

Zest of 1/2 lemon and about a Tbsp of sugar


In a large mixing bowl combine the sugar and oil and stir.  Add the eggs and stir again.  Mix in the baking powder and salt and stir again.  Then blend in the Hammer & Tuffy's Blueberry Granola and 1/2 of the fresh blueberries.  Pour the mixture into the baking dish and sprinkle the remaining blueberries over the top.  Combine the lemon zest and tbsp of sugar, then sprinkle this over the top of the mixture in the pan.  Bake for 40-50 minutes until a toothpick inserted in the middle comes out clean.  Let cool a bit then cut into wedges or squares and eat this warm.  It's great just as is or you can pour a little milk or cream over it too!
